  • Directions: Preheat oven to 350°F. Line a baking sheet with parchment paper. In a medium bowl, combine almond flour, baking soda, and salt. In a separate large bowl, beat butter and erythritol until creamy. Beat in egg and vanilla extract. Gradually stir in dry ingredients until well combined. Fold in chocolate chips. Form dough into balls and place on prepared baking sheet. Bake for 12-15 minutes or until lightly golden brown. Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely. Grease a 9-inch springform pan. In a medium bowl, mix together almond flour, erythritol and melted butter. Press mixture into the bottom of the prepared pan. In a large bowl, beat cream cheese and erythritol until creamy. Beat in eggs, one at a time, then stir in vanilla extract. Pour mixture over crust and smooth out the top. Bake for 40-45 minutes or until the center is almost set. Let cool to room temperature and then refrigerate for at least 4 hours or overnight.
